For real, though, plants need to breathe, and they breathe through their skin – if you block their pores with glue and fabric, they’ll go off faster.
Paints aren’t as bad, though they’ll also block the pumpkin’s ability to exchange the gasses (ethylenes) that need to escape. Ethylenes cause decomposition if the plant has to stew in them. If ethylenes are trapped, the veg will turn much faster. This is why you can buy ethylene exchanging bags and containers to keep your produce fresh longer in your fridge. Some produce sections sell veg in special green ethylene bags meant to facilitate this gas exchange.
The only reliable way to keep seeds and pulps from turning is to gut the pumpkin before decorating it and either roast or preserve the seeds.

Roast the seeds on a baking sheet and they’ll keep, or refrigerate them if you don’t want to eat them right away. At least then you can see whether they’re going off, rather than just trusting the pumpkin doesn’t start rotting on the inside where it’s not visible before you get round to using them.
